Paddlefish Caviar
Paddlefish Caviar consists of roe from the Paddlefish, which is a primitive fish from the Polyodontida family. The Paddlefish has a distinctive look with a large mouth and elongated, flat snout, which protrudes out from the front of its head. Although these fish are not in the same family as sharks, they resemble sharks in a few different ways, particularly their skeletons, which are also primarily composed of cartilage. Scientists don’t know exactly how long the Paddlefish lifespan is, but they believe that it is somewhere around 50 years of age.
There are only two known modern species of Paddlefish: the Chinese Paddlefish and the American Paddlefish. However, there is reason to believe that the Chinese Paddlefish could very well be extinct, as it has not recently been seen in the wild. Chinese Paddlefish have reportedly grown up to 12 feet in length, and can weigh as much as 660lbs. The American Paddlefish is comparatively small, usually only about 5 feet in length, weighing in at around 60lbs.
Paddlefish Caviar is smaller than typical sturgeon caviar, but as a non-sturgeon variety, it is known to have just as delightful of a taste. Paddlefish Caviar can vary in colour from black to deep grey, and is small and shiny in appearance.
