Acadian Sturgeon Caviar (Wild), New Brunswick, Canada


Acadian sturgeon caviar from wild-caught sturgeon out of the pristine waters of the St. John River in New Brunswick, Canada. Sustainably harvested and packaged with pride, Acadian uses only the finest, mature Atlantic Sturgeon (species: Acipenser Oxyrinchus) for their caviar. The caviar “grains” (eggs) are medium-sized, ranging from 2.3-2.5mm in diameter, and are dark black with hints of olive color. They have a mild-medium, low intensity, creamy biscuit, fresh rising bread flavor, with hints of ocean/brine undertones.
